Conventional tomato paste at 36–38° Brix is a high-solids tomato concentrate used by industrial manufacturers that want to move and store more tomato solids with less accompanying water. The concentrated format is well suited to applications where the ingredient will be reconstituted, blended or remanufactured into sauces, soups, foodservice bases and regional packing formats.

High-solids concentration
The 36–38° Brix range is commonly selected when freight efficiency, storage density and controlled dilution are important. Because more tomato solids are concentrated into each unit of product, manufacturers can reconstitute the paste according to the solids level required by the finished recipe.
The higher concentration does not by itself define final performance. Consistency, process type, color and other analytical parameters should be reviewed together when selecting a supply program.
Reconstitution and formulation
High-solids paste is typically diluted or blended during manufacturing to reach the desired finished concentration. The required water addition depends on the target solids of the final sauce, soup, puree or base and on other liquid ingredients present in the formulation.
Controlled reconstitution can give manufacturers flexibility to use one concentrated tomato base across multiple recipes. Paste may also be blended with diced tomatoes, puree, seasonings, vegetables or other ingredients to build the required texture and flavor profile.
Specification focus
Common buying parameters include Brix, color, Bostwick or other consistency measures, pH, acidity, finish, Howard mold count where applicable and commercial sterility. Flavor and microbiological criteria may also form part of the agreed specification.
For industrial tomato concentrates, the interaction between soluble solids and consistency is especially important. Two products with similar Brix values may behave differently during pumping, dilution and cooking if their break process or natural viscosity characteristics differ.
Color and finish
Color can be a significant commercial parameter in products where the tomato base strongly influences the final appearance. Buyers may specify color expectations according to the intended application and processor program.
Finish describes the physical refinement or particle characteristics of the concentrate and can influence smoothness, mouthfeel and downstream filtration or processing behavior.

Industrial handling considerations
Higher-solids tomato paste can require more careful pumping and extraction than lower-concentration products because of its greater viscosity. Pump type, product temperature, line diameter and extraction equipment can all affect handling performance.
Manufacturers should verify that receiving and blending systems are suitable for the selected consistency and pack format. Production trials may be appropriate when switching between origins or processors with different physical characteristics.
Bulk packaging and storage
High-solids paste is commonly supplied in industrial aseptic formats such as sterile bags in drums or larger bulk bins, depending on the processor and supply program. Exact net weights, liner systems, pallet patterns and container loading configurations vary.
Storage conditions and shelf life are product-specific and should be confirmed on the current technical specification. Aseptic packs should be handled in accordance with the processor’s storage and opening instructions.
Conventional supply programs
