Conventional tomato paste at 28–30° Brix is a widely used industrial concentrate for manufacturers that require a practical balance of tomato solids, handling characteristics and formulation flexibility. 28–30° Brix concentration
The 28–30° Brix range is commonly used when manufacturers want concentrated tomato solids without moving to the higher concentration levels associated with 30–32 or 36–38° Brix paste. It provides flexibility for dilution, blending and direct formulation in many industrial applications.
Because the concentration is relatively versatile, 28–30° Brix paste can be suitable for manufacturers producing multiple tomato-based products from a shared ingredient platform.
Hot break and cold break options
This concentration may be sourced as hot break or cold break subject to crop conditions and processor capability. Hot break programs are generally selected when greater viscosity and body are important, while cold break products may be preferred where a fresher tomato profile and comparatively lower viscosity are advantageous.
The process type should be selected according to the finished product rather than concentration alone. A ketchup or thick sauce system may have different consistency requirements from a soup, beverage or lighter culinary formulation.
Specification focus
Buyers commonly evaluate soluble solids, process type, consistency or Bostwick, color, pH, acidity, finish and microbiological parameters. Commercial sterility, flavor profile and packaging requirements may also be included in the agreed product specification.
Products with the same Brix can differ in viscosity and processing behavior depending on the raw tomato characteristics, break process and finish. The complete technical specification should therefore be reviewed before approval.
Consistency and color
Consistency is especially important in applications where the tomato paste contributes a large proportion of the finished-product body. Bostwick or another agreed consistency method may be used to compare available programs.
Color should also be reviewed against the intended finished product. Tomato color can influence the visual appearance of ketchup, sauces, soups and other products where the tomato base is a significant part of the formulation.

Storage conditions and shelf life should always be confirmed from the current technical specification and applicable lot documentation. Aseptic packs should be handled according to the processor’s recommended storage and opening procedures.
